Deep golden yellow with intense green shades.
Fruity, of light or medium intensity. Fruity and vegetable, slightly characterized by a smell of ripe tomato, aromatic herbs and dried fruit.
Fruity, of light or medium intensity. Complex and harmonized, with shades of tomato, sweet almond and mowed grass. Slight and well balanced bitterness and spiciness. The protected designation of origin "Monte Etna" is given only to the extra-virgin olive oil extracted from the olive variety called "Nocellara Etnea", with a percentage of at least 65%. Other varieties are allowed as well, such as the “Moresca”, the "Tonda Iblea", the "Ogliarola Messinese", the "Biancolilla", the "Brandofino" and the "L'Olivo di Castiglione", with a variable percentage to a maximum of 35%.
